Ingredients:
1.300 grams yellow noodle
40 grams bean sprouts
2 cloves garlic
1/2 stalk scallion
5 tiger prawns
80 grams chicken meat
10 grams red chili
300g Chinese (Napa) cabbage 大白菜- shredded
200g Cai xin 菜心- cut to about 2 inches length

MARINADE:
1/2 teaspoon salt
1/2 teaspoon sugar
1/2 teaspoon corn starch

SEASONING:
1/2 teaspoon dark soy sauce
1 teaspoon light soy sauce
1/2 teaspoon salt
1/2 teaspoon sugar
1 tablespoon oyster sauce
1/2 cup water
White pepper powder

Directions
1. Heat the pan with oil and pour the beaten eggs into the wok.
2. Fry the omelette for 3 mins and shred it into slices.
1. This is to be dished out with the fried noodles.
2. Rinse chicken meat and prawns with water and drain..
3. Heat up cooking oil. Add in garlic and stir-fry until fragrant.
4. Add in chicken meat, tiger prawns and stir-fry until they are half-cooked.
5. Add in caixin and stir-fry with oyster sause
6. Add in bean sprouts, noodles, and do a few quick stirs.
7. Add in the seasoning, continue to stir and toss the noodles evenly until they are cooked.
8. Dish out and garnish with shredded chilies and egg threads. Serve hot.
